Simple Easter Cupcakes || Baking

I love Easter baking.
Everything is bright and colourful and full of cute pastel colours! And chocolate of course....

Here is my recipe for some super cute, super simple Easter cupcakes!

Ingredients:
Cupcakes
120g baking butter
120g caster sugar
 120g self-raising flour 
2 eggs
1 tsp vanilla extract
Butter icing (recipe taken from Mary Berry)
175g butter
350g icing sugar 
2-3 tbsp milk
1 tsp vanilla extract
Pink and purple food colouring
To decorate
Cadbury's mini eggs
Sprinkles

Preheat oven to 200 degrees celsius and line cupcake tray with 12 liners.
Method:
1. Cream the butter until it is pale and fluffy. Add in the sugar and mix until creamy.
2. Sift the flour and beat the eggs with the vanilla extract.
3. Alternate between the flour and egg mixture and mix between each addition.
4. Divide the mixture between the 12 cupcake liners and put in the oven for 12-15 mins. Remove from oven and cool on a wire rack.
5. For the butter icing, beat the butter until pale and fluffy. Sift the icing sugar into a separate bowl. Add half of the icing sugar along with the vanilla and 2 tsp milk into the butter and beat until combines. Add remaining icing sugar and milk (if required).
6. Divide the icing sugar into 3 bowls. Colour 1/3 pale pink and another 1/3 pastel purple. Leave the final third white.
7. Lay each colour of icing side by side on a piece of cling film. Roll carefully so the colours lie on top of each other. Place the icing into a prepared icing bag fitted with a star tip and ice the cupcakes. (This step makes more sense visually so check out my video to see what I mean).
8. And now the fun part! Decorate your cupcakes however you wish! I sprinkled some pastel coloured sprinkles on to each and placed one mini egg on top of the icing.
